Viticulture:
The domaine is managed in organic agriculture, Eco Cert label planned in 2022.
Certified High Environmental Value.

Vinification:
Harvested at night to keep the freshness.
Direct pressing, fermentation at 16° for a better aromatic expression.
Sulfites : 74mg/L (the limit for organic wines is 150 Mg/L).
Alcohol content : 13% Vol.

Blending:
Selection of the best parcels by the team and our oenologist Gilles Baude.
Grenache, Syrah, Rolle.

Tasting:

  • Robe: Pale pink with a beautiful luminosity and reflections of a deep and bright pink colour. Fine legs that flow slowly and reveal its fleshy side and a certain density.
  • Nose: The first nose is expressive and distinguished by floral and red fruit aromas.
    The second nose, after oxygenation, reveals more clearly strawberry, raspberry and cherry, as well as notes of spring white flowers.
  • Palate: a frank and fresh attack, a delightful and with fine peppery spice tones. A rosé with a beautiful structure, balanced, a long aftertaste and slightly salty with beautiful caudalies.

Food and wine pairing:
Aperitifs, raw vegetables and seafood
Sea bass with summer vegetables accompanied by fennel and olives.

Serving temperature:
To be served between 8 and 10°.

Soil : Clay and limestone.

Vinification:

Direct pressing.
Sulfites : 70mg/L (the limit for organic wines is 150 Mg/L).
Alcohol content : 13% Vol.

Blending:
Selection and blending done by Gilles Baude.
Grenache, Cinsault, Merlot, Colombar.

Tasting:

  • Robe: bright, with lychee reflections.
  • Nose: we can distinguish notes of mirabelle plum accompanied by rose petals.
  • Palate: a fresh and supple attack, we observe a retro-olfaction of the mirabelle plum, a perfect balance between acidity and bitterness, and a delicate evolution towards a tasteful final.

Food and wine pairing:
Charcuterie, cheese, seafood and raw vegetables.
